Shortbread Cookies Recipe

This is such a simple recipe which creates delicious cookies! Great for everyday treats or a special occasion.

½cup/125g butter (room temp)

¼ cup/55g superfine sugar (& a little extra for dusting)

1 1/3/180g cup plain flour


Pre-heat your over to 375F/Gas 5.

Grease two baking trays.

Cream together the sugar and butter until smooth.

Sift in the flour and mix until it all comes together as one (get hands on!)

Dust your work surface with a little flour and roll out the mix until about 1cm thick.

Use a cookie cutter to cut out your cookies and place on the baking tray with a small gap in between each one to allow room for them to expand when baking.

Sprinkle each biscuit with a little sugar.

Pop the tray in the oven for around 15-20 mins or until slightly golden.

Once baked take out of the oven and place on a cooling rack.

When cool decorate as you wish. Why not half dip in chocolate? Leave plain and classic? Drizzle with coloured icing?
